I wanted to be a sailor and I wanted to study in military school, but I took the entrance exam for the naval school and I had no luck, so I decided to study Food and Beverage. When I did my internship I got experience in different departments: the kitchen, dining room service, restaurant administration, and the bar. During the internship in the first hotel where I was, I started in the bar division. I confess that I also like the kitchen and I’m drawn to the kitchen, but I prefer drinks. I worked in restaurants for a short time, which are a very different business than hotels, but I found that I love hotel operation, so I decided to return to hotels.   In hotel operation I learned many more things that I now put into practice, such as standards, certifications, processes, how to handle a large volume of beverages and products.   And that is …

Isabel, thank you very much for your time today. I would love to know a little about you.   I am originally from the city of Coatzacoalcos in the state of Veracruz. It is an oil zone, and the economy is based on oil. Most people who live there work in the oil industry. My whole family moved to Cancun when I was 4 years old, because my father was transferred from his job in Coatzacoalcos to Cancun. When I was 13, we returned to Veracruz with my mother. I went to school in Veracruz, but I always told myself that if I had any chance, I would return to live and make my life in Cancun! I am very fortunate to have a family that I love. I have 3 siblings (2 sisters, my brother and me). I am originally from Peto, Yucatán and I came to Cancun 9 years ago, to study at University for my career. I studied sustainable tourism and hotel management. It is a field that includes hotel management, planning and development, alternative tourism, mass tourism, sustainability, and ecological impact.   I also studied archeology, and I am passionate about everything that has to do with matter: discoveries, history, culture. Born and brought up in Cancun, his first passion was tennis, but it wasn’t long before he realized that cooking was his one true love, dedicating his life to the kitchen to create fabulous desserts, bread and pastries. Enjoy this short interview.   How did your passion for baking begin? I knew I wanted to be a chef at the age of 16. While I was still in high school, I took a diploma in Mediterranean cuisine just out of curiosity, and it was during that time I realized I wanted to be a chef. I have now been working in bakeries for more than 16 years, and have never stopped learning and perfecting my techniques.
